Oh YAAASSSS it is officially strawberry season here in California and I am ready to celebrate!!! (...and by celebrate I mean shove my face full of all things strawberry, like these vegan salted chocolate covered strawberries!)
I actually spoiled myself last weekend and had these for breakfast! I bought an entire flat of berries on Saturday and even though I ate my weight in berries on their own I couldn't resist melting some of my favorite vegan baking chocolate, Enjoy Life and dipping those luscious berries right on in.
I have been working on so many fun strawberry recipe ideas to share here with you in the upcoming weeks, but this one had to come first. Mainly because if you aren't already dipping and dunking your berries into a vat of Enjoy Life chocolate you are seriously missing out, and also because next week I am sharing a new recipe for a chocolate covered strawberry cake that is decorated with these little gems. Did I mention, that there will be cake on the site next week? C.A.K.E.
Alright, last but not least, these berries are sprinkled with a Maldon sea salt-crystallized sugar duo that is sure to blow your taste bud's minds. The fruit bandit himself can't help, but get his little hands in the mix sprinkling this little flavor bomb over our berries! However if salted chocolate isn't your thing no big deal, just leave it off.

PrintVegan Salted Chocolate Covered Strawberries
Don't limit this scrumptious chocolate coating to just strawberries. Dress pineapple, orange segments, skewered berries and even grapes in this chocolaty shell too!
- Prep Time: 10 mins
- Cook Time: 1 min
- Total Time: 11 mins
- Yield: 1 pint of chocolate covered berries 1x
Ingredients
- 1 cup Enjoy Life mini chocolate chips
- 1 tablespoon non-hydrogenated shortening
- ½ tablespoon Maldon sea salt flakes
- 1 ½ tablespoons sparkling sugar
- 1 pint of strawberries, washed and completely dried
Instructions
- Line a sheet pan with parchment or wax paper and set aside. In a small dish combine the salt and sugar and stir well.
- In a microwave safe bowl combine the Enjoy Life mini chocolate chips and the non-hydrogenated shortening, no need to stir just yet. Transfer the bowl to the microwave and heat in 15 second bursts at 50% power stirring in between each cook time until the chocolate is smooth and velvety.
- Once the chocolate is melted hold a strawberry by the stem, dip the berry into the chocolate, lift and twist, letting any excess chocolate fall back into the bowl. Transfer the berry to the prepared baking sheet then sprinkle with a bit of the salt and sugar mixture. Repeat with the remaining strawberries and chocolate allowing the chocolate to set completely before serving.
