12 Must Make Summertime Dishes
This kale & quinoa salad is inspired by my 2 favorite superfoods, kale and quinoa! Nick’s restaurant here in Long Beach features a similar salad that I literally crave, but paying $17 for a salad as often as I have the craving for it just doesn’t make sense. So, I created my own version, now I can indulge whenever I want. This salad is loaded with so many delicious little morsels like red bell peppers, sunflower seeds, almonds, grapes and goat cheese! It’s sure to be a favorite in your house too!
My family LOVES spaghetti dinners! We devour this gluten free pasta with Homemade Napoletana Sauce at least once a week. You can make this dreamy sauce with regular butter or you can make it vegan by using Earth Balance. Either way it is delicious! If you are making a vegan version though I have recently found that simmering 1/4 cup raw cashews with the tomatoes and onion make this sauce even creamier like the non-vegan version. Sprinkle your finished dish with fresh herbs and vegan Parmesan cheese for a spectacular meal!
No cook dinners are essential during the warmer summer months. These Massel Tex Mex Lettuce Wraps are the perfect solution to the age old question “What’s for dinner?” on those hot and sticky summer nights. Just chop, mix and marinate your way to a delicious dinner in no time!
Looking forward to summer cookouts? So are we! These Fully Loaded Black Bean Burgers are a great vegetarian option to have on hand for your veggie loving family and friends. (Although our meat loving friends adore these burgers too!) Don’t forget a heaping side of our Crispy Oven Baked Parmesan & Polenta Fries.
There aren’t many snacks more addictive than Crispy Kale Chips!!! Our kids go nuts for these and will take them over chips any day of the week. They are easy to make and super good for you too.
Whether you are packing lunches for work or if you are like me and have hungry kids at home all summer these ramen cups are easy, delicious and convenient to have on hand! This homemade version of the junk food classic is sure to be a BIG hit in your house!
This Saffron & Garlic Rice with Toasted Almonds is a side dish superstar! It goes with practically any main dish you put on the table and it’s gorgeous too. Any leftovers will make for a great breakfast topped with a fried egg and sauteed greens.
All that fun in the summer sun can sure work up a big appetite! These Pinto & Pepper Jack Stuffed Poblano Peppers are on my “to make” list this summer for sure. I like to prep the sauce and stuff the peppers in the morning then when we get home all I have to do is combine the two in a skillet and bake.
When summer really cranks up the heat and you cannot even fathom the idea of turning on the stove this easy vegan ceviche will sure come in handy! Warning: if you invite me to your summer potluck, this is what I am bringing!
While technically this link leads you to a recipe for Oven Roasted Kale and Sweet Potato over creamy polenta, I suggest during the summer months skipping the polenta and stuffing all of that gorgeous oven roasted kale and those crispy little sweet potatoes into taco shells and topping them with all of our favorite taco fixin’s. Trust me, it makes for a pretty epic taco Tuesday!
Well, hello gorgeous! Look, I don’t care what time of year it is, I like soup. Especially, this Grilled Mexican Street Corn Soup. It’s spicy and sweet with just a hint of creaminess from that cashew cream drizzle.
Every season needs a go-to potato side dish and I think these Saffron & Citrus roasted fingerlings are perfect for summer. Lots of herbs, loads of citrus flavor and crispy golden roasted potatoes. Just think about it…juicy burgers, smoky sweet baked beans and these beautiful spuds!
