This easy lasagna recipe layers cottage cheese and mozzarella into one sheet pan lasagna that feeds 12. Bake one now, freeze one for later.
½ lb. lean ground beef
½ lb. hot Italian sausage
28 ounces canned fire-roasted tomatoes with garlic

1 yellow onion, halved

1 cup grated Parmesan cheese

¼ cup chopped fresh basil leaves

2 large eggs, lightly beaten
2 packages gluten-free or regular no-boil lasagna noodles (18-20 sheets)
1 zucchini, sliced into thin strips lengthwise on a mandoline or with a vegetable peeler
4 cups Real California Milk mozzarella cheese, shredded
Fresh basil leaves, flaky finishing salt, and coarsely ground black pepper for garnish
In a saucepan, combine the fire-roasted tomatoes with garlic, butter, onion halves, cut side down into the tomatoes, bouillon, and raw cashews. Season well with salt and pepper.
Place the lid on the pan and turn to medium heat for 10 minutes. Stir, replace the lid, and cook for another 10 minutes. Stir, replace the lid, and cook for 5 minutes more. Remove from the heat and allow to cool slightly before removing the onion halves; discard or chop and set aside to mix in with the meat once it is cooked, then blend the sauce with ¾ cup water in either a high-speed blender or an immersion blender. Set aside.
Start by preheating the oven to 425°F. In a large skillet, cook and crumble beef and sausage over medium heat until no longer pink. Drain the meat and transfer to a large bowl; stir in the prepared fire-roasted marinara sauce and chopped cooked onion, if using.
Meanwhile, in a mixing bowl, combine the cottage cheese, Parmesan, parsley, and basil. Season with salt and pepper. Stir to combine. Add the eggs and stir until incorporated.
Lightly coat an 18x13x1-in. baking pan, or two 13x9x1-inch pans with nonstick spray. Spread 1½ cups meat sauce over the bottom of the pan. Arrange a single layer of the lasagna sheets over the sauce, overlapping to fit. Dollop cottage cheese mixture evenly over the sheets and spread to an even layer. Sprinkle with ½ of the mozzarella cheese. Repeat until ingredients have been used.
Cover the pan tightly with aluminum foil. Bake for 25 minutes.
Uncover and continue baking until bubbly, and the lasagna sheets are just tender, 10 to 15 minutes.
Remove from the oven and let stand for 10 minutes before slicing with a pizza cutter or sharp knife and serving.
You can substitute a 32-ounce jar of your favorite marinara sauce.
If you don't have an 18"x13" pan, evenly layer the ingredients between two 13"x9" baking dishes to make 2 pans of lasagna. Bake one of the pans as directed. The other, tightly wrap for the freezer. Freeze completely and use within 3 months.
Place the frozen lasagna pan into the refrigerator to thaw overnight. Once thawed, continue with the steps for baking.
In order to store leftover lasagna, wrap and refrigerate up to 4 days, or freeze up to 2 months, ideally wrapped in individual portions for quick thawing.
In order to reheat, thaw overnight in the refrigerator if frozen. Heat, covered with foil, in a preheated 350°F oven until hot throughout. You can also reheat small portions in the microwave or on the stovetop.
