Hello summer, I would like you to stay just a tad longer please.
I would like a few more weeks where gigantic bowls of fruit qualify as meals, time to play in the sun and just a few more mornings of sleeping in without an alarm. Is that too much to ask?
Whether I like it or not, the end of summer is near. We are shopping for school uniforms, my daughter has already decorated her binder ( One Direction of course!) and I find myself trying to cram a million and one things into every single moment of daylight we have.
Lucky for me on really hectic days I can come home at night, kick my shoes off and whip up one of these Pineapple and Cilantro Moscow Mules - these tropical beauties are literally the essence of summer in a sip.
Apparently I am not alone in my quest to hold on to summer - Sherrie of With Food + Love and Renee of Will Frolic for Food have brought an amazing group of talented bloggers together to #drinkthesummer ! We are celebrating the best the summer has to offer with cocktails, mocktails and everything in between. It might be time to throw a summer party and invite all of our friends, because these summer sips are not to be missed!

PrintPineapple and Cilantro Moscow Mule
Looking to make a refreshing non-alcoholic drink? Simply omit the vodka and replace it with ginger beer.
- Yield: 1 drink 1x
Ingredients
Scale
- 6 cilantro leaves
- ice
- 1 ½ ounces vodka
- 4 tablespoons pineapple puree
- 1 tablespoon freshly squeezed lime juice
- ginger beer
Instructions
- Gently muddle the cilantro leaves in a rocks glass to release their oils. Add ice to the top. Pour the vodka over the ice followed by the pineapple puree, lime juice, and top with ginger beer. Stir and serve.
Notes
To make pineapple puree simply blend pineapple chunks in the blender until smooth. Store in an airtight container in the refrigerator until ready to use.
If you like sweeter drinks add a tablespoon of agave to the drink.

I made this last night for a few friends. It was a hit! Actually, the husbands ignored their beer and requested this cocktail instead! Super refreshing in this sweltering heat. Thank you!
Meg says
Kathy, you totally made my night! When the husbands put down the beer you know you have a winner 😉 So glad you enjoyed the cocktails - Cheers!

Pineapple and cilantro are just perfect with each other; aren't they? And I am thoroughly rebelling against the notion that summer is almost over. Just yesterday, I sat out in the backyard and enjoying doing nothing, for just a moment. I've recently enjoyed adding fresh peaches to a Moscow Mule, but I will definitely try adding some pineapple. With that gingery bite? Yes, please. Enjoy those last-of-summer days! 🙂
Meg says
Oh Jayme, Peach Moscow Mules sound AMAZING!!! Thank you for sharing that idea - I just happen to have a few peaches on my kitchen counter.
Sara @ Cake Over Steak says
Mmmmm I love your addition of pineapple to a moscow mule. Happy #drinkthesummer!

I've {very} recently decided that I enjoy cilantro in my bevvies. So! This cocktail seems like something I need to try ASAP. Thanks for hanging with us Meg, all my love, all the time, xx!!!

Oh, man. I'm so not excited about summer ending, but this drink looks like it would totally ease the pain. Let's plan on a cocktail (or two) next weekend 😉

Apparently it's been too long since I've been to your actual site, Meg (I always read in Feedly) -- love the refresh! And speaking of refresh...ing (face-palm monkey), this sounds divine! I love me some cilantro-infused bevvies!

Mm, lovely. I happen to adore pineapple AND cilantro, although I've never had them together and I can't think of why not. This combination should've happened for me a long time ago - so thank you for introducing it to me! Lovely
Meg says

Becky Winkler (A Calculated Whisk) says
