On our busiest of weeknights I’m lucky if I can scrounge together a collective 20-30 minutes to make a dinner that will feed all of us happily. So, I am always on the lookout for easy ways to save myself time whenever I can like this NEW Coconut Curry Stir Fry Kit from Taylor Farms! All the vegetables are washed, ready to cook, and it’s a budget-friendly, gluten free meal that everyone enjoys.

Those aren’t ordinary meatballs either! They’re packed with exotic flavors and just happen to be paleo friendly too! Let’s break them down…

50/50 || My meatballs are a 50/50 mix of ground pork with a blend of ground dark and white meat turkey. This particular blend ensures a moist, tender meatball than cooks up on a sheet pan in the oven as opposed to pan searing and simmering in sauce.
Spice it up! || These meatballs are absolutely loaded with flavor! Cilantro, green onion, garlic & ginger make these bad boys downright irresistible, but when you drizzle the prepared yellow coconut curry sauce from the Taylor Farms Coconut Curry Stir Fry Kit over the top of them they literally explode with FLAVOR!

Ditch the crumbs! || Good news! There is no need for the breadcrumbs that are called for in traditional meatball recipes. This recipe calls for coconut flour which not only lends incredible flavor to the finished dish, but also allows these meatballs to fit practically any diet deliciously!
Cook once, eat twice|| This recipe makes quite a few meatballs. Reason being, my motto is work smarter not harder in the kitchen. I can prep these meatballs once, cook off as many as I need at the moment and then I freeze any remaining meatballs for an even easier meal later on.
Sauce it up!! || I’m not sure about you, but for me the sauce for a batch of meatballs is where I spend most of my prep/cook time. Thanks to the delicious yellow coconut curry sauce in Taylor Farms Coconut Curry Stir Fry Kit that part of the meal is done for me in advance. I simply heat the curry sauce that comes in the kit in its own saucepan then toss half with the stir fried broccoli, cauliflower, carrots and snow peas – then I toss the other half over the meatballs!

Sheet Pan Coconut Curry Meatballs

  • 1 pound ground turkey (all dark or a mixture of light and dark is best)
  • 1/2 pound ground pork
  • 1/4 cup coconut flour
  • 1 green onion, minced (light and dark green parts only)
  • 2 small cloves of garlic, minced
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon grated ginger
  • 1  tablespoon gluten free soy sauce or coconut aminos
  • 1 egg, beaten
  • 2½ teaspoons coarse kosher salt
  • 1 teaspoon black pepper
To serve: Taylor Farms Coconut Curry Stir Fry Kit, prepared per instructions on bag, reserving the yellow coconut curry sauce and prepared Jasmine rice.


Preheat the oven to 400°F and line a sheet pan with parchment paper. Set aside.
In a large mixing bowl combine the turkey, pork, coconut flour, green onion, garlic, cilantro, ginger, gluten free soy sauce, egg, salt and pepper. Combine well. Use a small scoop to measure out the meat mixture and form it into 1 1/2-inch meatballs. At this point the meatballs can be frozen and saved for another day, or proceed with instructions below.
Arrange the desired amount of meatballs on the prepared sheet pan about 1-inch apart. Bake for 20 minutes. Add 5 more minutes to the bake time if cooking from frozen.
While the meatballs are baking prepare the Taylor Farms Coconut Curry Stir Fry Kit per the instructions on the bag, reserving the yellow curry sauce.
In a separate small saucepan, heat the yellow coconut curry sauce until simmering. Toss half of the warmed sauce with the cooked vegetables from the Taylor Farms Coconut Curry Stir Fry Kit and toss the other half of the sauce with the prepared meatballs.
To serve, top cooked Jasmine rice with the prepared Taylor Farms Coconut Curry Stir Fry Kit vegetables. Arrange the desired amount of meatballs on top and sprinkle with the toasted coconut that is included in the Coconut Curry Stir Fry Kit.
