We all LOVE eating these straight from the freezer, but sometimes Todd and I take it an extra step and drop one of these popsicles down into our margarita on taco night! Talk about a summer treat!
2 cups, peeled, large diced, cucumber
3/4 cup simple syrup, see notes
1/3 cup freshly squeezed lime juice
1 teaspoon freshly grated peeled ginger
Combine all of the ingredients in a blender and puree until smooth. Strain through a fine-mesh sieve into a large measuring cup, then divide between popsicle molds. Insert popsicle sticks into molds and freeze for 6-8 hours.
Basic Simple Syrup
Combine 1 cup water with 1 cup granulated sugar in a small saucepan over medium low heat. Stir to combine then allow to heat until the sugar is completely dissolved. Store in an airtight container in the refrigerator fir yo to 2 weeks.
