Our garden is overflowing with cucumbers this summer to the point that we we are harvesting sometimes 5 or 6 of them a day! While the harvests were super exciting at first, it got old eating cucumber for days on end pretty quickly. That's when we decided to turn those cucs into an irresistible treat that not only would be impossible to turn down, but would be easier than pickles when planning to store for the long haul! Our Cucumber Limeade Popsicles are a refreshing blend of fresh cucumber, lime juice, and ginger all sweetened up and frozen into a refreshing pop that will not only help you beat the heat, but is irresistibly delicious too!
Confession, I am having a full on fling with limeade this summer that just won't quit!!!
That classic, soda shop inspired, sweet tart combo has me by the heartstrings and I'm just going to be honest and say that I don't think this flavor obsession will stop anytime soon. Once I started sipping on those Fresh Cherry Limeade cocktails I shared a few posts back I was hooked and I began trying to incorporate those flavors into other dishes.
Only 4 ingredients stand between you and your very own batch of Cucumber Limeade Popsicles, let's talk about them...
Cucumbers || While most of us refer to cucumbers as a vegetable they are actually a fruit! They are loaded with antioxidants and composed of about 96% water which makes them a great snack to hydrate with on a hot summer day!
Simple syrup || I always have a jar or two of simple syrup hanging around in the fridge for easy cocktails and recipes like this! Simple syrups are an easy way to quickly sweeten just about anything without having to worry about the graininess factor of using granulated sugar straight out of the bag.
Basic Simple Syrup
Combine 1 cup water with 1 cup granulated sugar in a small saucepan over medium low heat. Stir to combine then allow to heat until the sugar is completely dissolved. Store in an airtight container in the refrigerator fir yo to 2 weeks.
Fresh lime juice || Get ready for that nostalgic limeade pucker with every lick! Freshly squeezed lime juice has the ability to brighten just about any dish. Plus, lime juice is loaded with vitamin C which we all probably need more of these days anyways with covid hanging around this summer.
Fresh ginger || Ginger might just be the one ingredient that would cause someone to pause and question these popsicles, but I assure you it's DELICIOUS!! The ginger flavor comes through right at the end of every bite with just the teeny tiniest subtle bit of heat on the tongue.

PrintCucumber Limeade Popsicles
We all LOVE eating these straight from the freezer, but sometimes Todd and I take it an extra step and drop one of these popsicles down into our margarita on taco night! Talk about a summer treat!

Ingredients
2 cups, peeled, large diced, cucumber
¾ cup simple syrup, see notes
⅓ cup freshly squeezed lime juice
1 teaspoon freshly grated peeled ginger
Instructions
Combine all of the ingredients in a blender and puree until smooth. Strain through a fine-mesh sieve into a large measuring cup, then divide between popsicle molds. Insert popsicle sticks into molds and freeze for 6-8 hours.
