- 2–3 falafel
- 2 leave iceberg lettuce
- 1/4 cup mixed veggies (shredded carrots, mini bell pepper strips, chopped tomatoes)
- 2 tablespoons mixed herbs (dill, parsley, tarragon, mint and cilantro are a blend)
- 1 single serve hummus cup or 1/2 cup hummus
- Place all of the ingredients into a lunchbox being mindful to separate the vegetables and the falafel so that the falafel doesn’t get soggy.
