Pineapple and passion fruit come together to make one seriously delicious fruit syrup that can be used for cocktails, homemade sodas, ice cream topping, and more!

Ingredients

For the syrup

  • 1 1/4 cup unsweetened pineapple juice
  • 1/4 cup lime juice
  • 1 cup granulated sugar
  • 4 passion fruit, halved

For the Pineapple Passion Fruit Fizz

  • 2-4 tablespoons pineapple passion fruit syrup
  • 1 ounce coconut rum, optional
  • 3 tablespoons pineapple juice
  • 1 lime wedge
  • soda water

Instructions

Make the syrup

  1. Combine the pineapple juice, lime juice, and sugar in a saucepan over medium heat. Cook, stirring frequently until the sugar has completely dissolved, about 5 minutes. Bring to a boil. Reduce to a simmer and cook for 15-20 minutes or until the liquid has thickened slightly. Remove from the heat and stir in the passion fruit pulp. Cool completely. Pour into a jar or bottle for storage and refrigerate until chilled. Syrup will keep for up to 3 weeks.

Make the drink

  1. Fill a large cocktail glass with ice, add 2-4 tablespoons of the pineapple passion fruit syrup to the glass depending on how sweet you would like the drink to be. Add the coconut rum, pineapple juice, juice of 1 lime wedge and fill to the top with soda water.
