Our family thought using beets would be a fun way to add a little unexpected pop of color to the dinner table.
Water Beet Powder Masa Harina Corn Flour
In a measuring cup combine the water and beet powder. Beat with a whisk until all lumps have disappeared.
Add the masa and the water to a large bowl and mix until you form a soft dough.
Divide the dough into 18 equal sized balls then cover with a damp cloth to keep dough soft and moist.
Working with 1 ball of masa at a time, line a tortilla press with 2 sheets of plastic wrap or parchment. Place a ball between the sheets of plastic and then press the tortilla.
Heat a skillet over medium-high heat. Peel the tortilla from the plastic wrap. Cook each tortilla, turning the tortilla 3 times. Cover cooked tortillas with a cloth napkin.
Have leftover tortillas? They are great cut into wedges and fried up into crispy chips. Then you can dip and dunk them however you like.
