Gluten Free Oatmeal Date Cookies

I know that titling these cookies "The Best Gluten Free Oatmeal Date Cookies" is saying a lot, but I swear they REALLY are the best!

I mean, is there anything better than a brown sugar laced, buttery oatmeal cookie that's crispy outside and chewy inside? I think not!

- salted butter, softened - light brown sugar - granulated sugar - eggs - vanilla bean paste - all-purpose gluten free flour - baking soda - cinnamon - coarse kosher salt - quick cooking oats - old fashioned oats - pitted, chopped dates

Preheat the oven to 350°F and line a baking sheet with parchment paper. In the bowl of a stand mixer cream the butter and sugars together until light and fluffy.

Step 1

Add the eggs and vanilla bean paste and mix again until incorporated. In a separate mixing bowl combine the flour, baking soda, cinnamon, and salt. Add to the butter mixture and mix until incorporated.

Step 2

Add both of the oats and the dates to the mixing bowl and mix until incorporated. Use a spoon and form dough into balls. Space the dough balls apart on the baking sheet so they have room to spread as they bake.

Step 3

Bake in the oven for 9-11 minutes. Remove from the oven and let sit on the pan for 2 minutes before moving to a wire rack to cool. The cookies will be fragile the first few minutes out of the oven, but will firm up as they cool.
