Ingredients

  • 1/2 cup canned light coconut milk
  • 1/4 cup unfiltered apple juice
  • 1/4 cup raw cashews, soaked for 2-4 hours up to overnight, drained and rinsed well
  • 3 cups unpeeled, cored, chopped apple (I used 1 Fuji and 1 Ginger Gold)
  • seeds from 1/2 of a vanilla bean or 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 Medjool dates, pitted and roughly chopped
  • 1 cup of ice

Instructions

  1. Place all of the ingredients in the order listed into a high speed blender and blend until completely smooth.
