1 – 2 tablespoons agave nectar or honey for sweetness
Combine the minced cherries, lime juice, tequila, Grand Marnier, agave nectar, and a 3 or 4 cubes of ice into a cocktail shaker and shake vigorously for at least 30 seconds. Use a fine mesh strainer to strain the liquid into a cocktail glass pressing on the solids with the back of a spoon to release all of the moisture. Add ice to fill the glass and top with a splash of tonic for a bubbly effect. Stir to combine and garnish with a lime wedge and cherry.
To make quick work of mincing the cherries simply place them in a food processor and process them until they are chopped very fine
