Ingredients

Scale
  • 4 ounces watermelon puree, see note
  • 2 sprigs mint
  • juice of 1/2 a lime
  • 1 tablespoon agave
  • 2 ounces coconut rum

To serve

  • ice or frozen cubes of watermelon
  • mint sprigs, optional
  • lime wheels, optional

Instructions

  1. Combine all of the ingredients in a cocktail shaker with a scoop of ice. Shake vigorously enough for 20-25 seconds that the ice in the shaker breaks down the mint leaves into little flecks. Strain over ice into 2 small rocks glasses and garnish with frozen cubes of melon, mint sprigs and lime wheels. Serve immediately

Notes

To make watermelon puree: place the pink flesh of a seedless watermelon in a blender and blend on high power until completely the melon is broken down and smooth. Strain through a fine mesh strainer or cheesecloth if the puree feels gritty.
