Kash is BOOMING with kitchen confidence these days and I just love it! He's offering up his own recipe ideas, like the recipe we created together for this fruity avocado toast, and he has even come up with some new renditions of recipes I had almost forgotten about, like the Crunchy Gluten Free Avocado Tacos recipe I recently posted.
Let's talk about how Kash's Fruity Avocado Toast comes together...
Step 1 || Assemble the ingredients & make your mash
To make 4 servings of this Fruity Avocado Toast you will need to toast 4 pieces of bread then allow them to cool. Mash the flesh of 1 large (or 2 small) avocados in a mixing bowl with the juice of ½ a lime and a pinch of salt. Once the avocado is mashed and smooth enough to be spreadable scoop some onto each slice of toast and let your kiddo schmear to the edges.
Step 2 || Schmear your heart out!
Kash is always SO excited to be helpful in the kitchen, especially when something sharp is involved. Yikes! For spreading avocado mash I suggest a butter knife or a cheese knife with a rounded tip. It helps me to not be so worried about him cutting himself and allows him to really work that avocado mash out across the whole surface of the toast without slicing into the bread.
Step 3 || Decorate with fruit slices!
The adult in the kitchen will have to slice the thin slices of fruit for this toast, but little chefs LOVE to decorate! Kash's wound up looking like a deliciously decorated Easter egg! There is no right or wrong combo of fruits here - whatever your family loves is what you should serve, just make sure to slice them into bite sized pieces to make taking bites easier for little mouths!
Step 4 || Devour!!
This is a fun way to use up the little bits and bobs of fruit you have on hand in your fridge - a few grapes, a couple strawberries, maybe some fresh raspberries or blueberries too. The sky is the limit!!!
While this time of social distancing has been hard, it has allowed us to spend more time together in the kitchen and that brings so much joy to my heart - just knowing that when my kid's look back on this time in their lives, these are the memories they will recall. Not fear or fighting, but coming together in the kitchen for laughter, hugs, and delicious food that nourishes their bodies!

Ingredients
1 large or 2 small avocados, pits removed and flesh scooped from peels.
juice of half a lime
pinch of salt
4 slices of bread, toasted
2-3 large strawberries, sliced thin
3-4 grapes, sliced thin
Instructions
In a mixing bowl combine the avocado, lime juice, and pinch of salt, Mash with for or potato masher until it reaches a smooth, spreadable consistency.
Spread ¼ of the avocado mash over each of the slices of toasted bread.
Top with sliced fruit and serve immediately.
Notes
No grapes or berries? No problem! Any fruit you have on hand will work for this recipe.
