Chocolate Peanut Butter Oatmeal No-Bake Cookie

3 cups gluten-free quick-cooking oats

2 cups sugar

4 tablespoons cocoa powder

8 tablespoons butter

1/2 cup whole milk

1 cup peanut butter

1 tablespoon vanilla extract

Instructions

Line 2 cookie sheets with wax paper and set aside.

In a heavy saucepan bring the sugar, cocoa, butter, and milk to a boil over medium-high heat. Let boil for 1 minute add the peanut butter, vanilla extract, and oatmeal stirring well to combine.

Remove from the heat and drop the mixture by tablespoonfuls onto the wax paper. Allow to cool and harden for about 30 minutes, then store in an airtight container.

Notes

You can speed up the setting process slightly by placing the sheet pans of cookies into the refrigerator to chill instead of letting them set at room temperature.
