- 1 Persian cucumber, shredded on a box grater
- 1 garlic clove, pressed
- Juice and zest of 1 lemon
- Kosher salt to taste
- Freshly ground black pepper
- 2 tablespoons mixed herbs, minced, I use parsley, dill, mint, and cilantro just depending on what I have on hand.
- Combine all of the ingredients in a small bowl. Cover and refrigerate for up to 3 days.
