1 pint strawberries, washed, leaves removed, halved
¾ cup champagne vinegar
¼ cup red wine vinegar
¼ cup sugar
4 teaspoons Campari
¼ teaspoon balsamic vinegar
Over medium heat, place champagne vinegar, red wine vinegar and sugar in a small pot. Stirring often, cook until the sugar has completely dissolved, about 3-4 minutes. Remove from heat and stir in Campari and balsamic vinegar.
Place sliced strawberries in a sealable container and pour pickle liquid over the top. Allow to cool at room temperature, then seal and refrigerate for 24 hours.
Store refrigerated in an airtight container for up to 5 days.
