I’ve got something super unexpected and delicious to share with you today. Ever heard of pickled strawberries? Yep, you read that right—pickled strawberries! If you're looking for a unique way to enjoy this classic fruit, you're in for a treat. Pickling isn't just for cucumbers and veggies anymore. It’s time to give strawberries a tangy twist that will have you coming back for more!

Imagine this: the sweet, juicy goodness of strawberries combined with a tangy vinegar kick, and a splash of Campari! This vibrant Italian aperitif adds a sophisticated flair and a pop of color to our pickling brine, taking these strawberries to a whole new level.

What Makes Pickled Strawberries So Special?

You might be thinking, "Why on earth would I pickle strawberries?" Well, let me tell you, there are some seriously good reasons to give it a go. First off, it extends the life of your strawberries, so you can enjoy that peak-season flavor long after their prime. This is perfect if you’ve gone a little overboard at the farmer’s market (haven’t we all?).

But it’s not just about preservation—pickling actually enhances the flavor too. The process adds a tangy layer that perfectly balances the natural sweetness of the strawberries. Each bite is a juicy burst of sweet and sour that’s totally refreshing and addictively delicious.

And here’s where it gets really interesting: Campari. This bitter, herbal aperitif transforms our brine into something special. It not only gives the strawberries a gorgeous color but also adds depth and complexity to the flavor.

What Do You Need to Make Pickled Strawberries?

Alright, let’s gather everything we need. Here’s what you’ll need for this recipe:

    • 1 pint strawberries, washed, leaves removed, halved
    • ¾ cup champagne vinegar
    • ¼ cup red wine vinegar
    • ¼ cup sugar
    • 4 teaspoons Campari
    • ¼ teaspoon balsamic vinegar

These ingredients will create a brine that’s both flavorful and aromatic, with Campari adding that extra kick. The apple cider vinegar gives us the tang, while the sugar balances it out. The spices add warmth and complexity, making every bite a delight.

How Do You Serve Pickled Strawberries?

With your strawberries ready to go, it’s time to get creative! These sweet and tangy treats can jazz up all kinds of dishes.

    Party Platters

Add pickled strawberries to your next cheese board. Their vibrant color and unique flavor make them a standout. Pair them with sharp cheddar, creamy brie, or tangy blue cheese for a perfect bite.
Or go all out and build a pickle platter like this one. Simply load your favorite pickled fruits and veg along with crackers, nuts, and cheeses on a board and let your imagination, and taste buds, run wild!

    Salads

Toss them into your favorite salad. They’re amazing with fresh greens, goat cheese, and some toasted nuts. The tangy berries add a refreshing twist that’s unexpected yet perfect for summer.

    Sandwiches

Reimagine your favorite summer sandwiches by adding these juicy gems to the mix! Tart, tangy, sweet...what's not to love?!

    Cocktails

Use pickled strawberries as a garnish for your drinks. They’re especially delicious in a sparkling wine spritzer. You can even use the brine as a drink mixer for a fun twist on your favorite cocktails!

A clear glass up with a layer of whipped cream, topped with pink shaved ice, then topped with raspberries on tp of a table with a white linen napkin and fresh raspberries

    Desserts

Incorporate them into your desserts. Try them over vanilla ice cream, in a fruit tart, or layered in a parfait with yogurt and granola. The tangy kick adds a delightful contrast to sweet treats.

A serving bowl full of pickled strawberries.

And there you have it—a fun and delicious way to enjoy strawberries like never before! Pickling strawberries with Campari not only preserves their sweetness but also adds a delightful tanginess and a hint of bitterness that makes them truly unique.
