  • 1 (15.5-ounce) can of black beans, rinsed and drained
  • 3 cups vegan "beef" broth or vegetable broth
  • kosher salt and pepper to taste

For the Herb Laced Guacamole

  • 1/2 cup finely diced red onion
  • 1 clove garlic, grated
  • 5 avocados, halved and pitted with Casabella 4 'n 1 Avocado Tool
  • 1/4 cup tender cilantro stems and leaves, snipped finely with Casabella Clip 'N Strip Shears
  • 1/8 cup Italian parsley leaves snipped snipped finely with Casabella Clip 'N Strip Shears

Instructions

  1. Heat the oil in a large Dutch oven over medium heat. Add the onion and peppers, cook for 5 minutes until the onions are beginning to turn translucent and the peppers are slightly softened. Add the sweet potato and garlic then cook for 3 more minutes, stirring frequently. Stir in the tomato paste and the chili powder, cook for 1 more minute, stirring constantly.
  2. Add the canned tomatoes, beans, and broth. Stir to combine, season to taste with salt and pepper. Turn the heat up slightly, bring to a boil, then reduce to a simmer and cook, stirring occasionally for 1 1/2 -2 hours.

For the Herb Laced Guacamole

  1. Combine all of the ingredients in a bowl and use the Casabella 4 'n 1 Avocado Tool to mash everything together until combined.
