Gluten-Free Tortellini Soup with Meatballs

Ingredients

For the meatballs 

1 pound ground pork 

1 egg, lightly beaten 

¼ cup almond flour 

¼ cup gluten free breadcrumbs 

1 tablespoon fresh flat leaf parsley, chopped 

1 tablespoon Italian seasoning  

2 garlic cloves, minced  

2 teaspoons coarse kosher salt 

1 tablespoon olive oil 

 

For the Tortellini Soup  

2 teaspoons olive oil 

1 small yellow onion, finely diced 

2 stalks celery, sliced  

2 carrots, peeled and sliced 

1 (15-ounce) can crushed tomatoes 

1 (16-ounce) can tomato sauce 

6 cups beef broth 

1 teaspoon Italian seasoning  

Salt and pepper to taste 

1 ( 9-ounce) package gluten free or regular tortellini, more if you desire more pasta. 

2 tablespoons fresh flat leaf parsley, minced  

Freshly grated Parmesan cheese to serve 

 

Instructions

To make the meatballs:  

Combine the meatball ingredients except for the olive oil in a large bowl. Mix just until combined. Form into 1-inch bite-sized meatballs. 

Heat the olive oil in a 11” Black Cube Stainless, Fry Pan over medium-high heat. Sauté the meatballs until browned on all sides, about 8 minutes, using a splatter screen if necessary. Remove the meatballs from the heat and set aside. 

To make the soup: 

Heat the olive oil in a 7.5Qt Black Cube Stainless, stockpot over medium heat. Add the carrots, celery and onions.  

Cook the vegetables for 4-5 minutes or until starting to tenderize. Add the crushed tomatoes, tomato sauce, beef broth, Italian seasoning to the pot and add salt and pepper to taste. 

 

Bring to a simmer. Add the meatballs into the soup and simmer for 5 minutes. Add the tortellini to the soup and simmer for 5 minutes more or until the pasta is cooked through and the vegetables are tender.  

Top with parsley and serve with Parmesan cheese. 

Notes

To make ahead you can prep the soup through forming and cooking the meatballs in the soup base. Cool and store. When ready to serve reheat the soup and add the tortellini when simmering. Simmer for the cooking time on the package of tortellini before serving.
