    Yes, you read that title right...Protein Packed Raspberry Granita Parfaits! This 5-ingredient frozen treat is delicious to eat and simple to make. It's also packed with 20 grams of protein! How on earth did we do it? It's easier than you might think.

    If you've never made a granita before, you are in for a treat. Granita is an Italian frozen dessert that is traditionally made by hand instead of in a machine. Because of this, the texture of granita is coarser and flakier than other frozen treats you may have had! It's briefly crunchy at the first spoonful and then melts in your mouth with a burst of flavor.

    Traditionally, granitas are made by using a fork and lots of patience to gently scrape a frozen mixture. We also found that you can make an easier, slightly fluffier version of granita in your high powered blender! YES!!! Don't worry if you don't have one of those blenders though. We are gonna walk you through how to make both versions.

    How to make granita the traditional way with a fork and a shallow dish.

    Pour your favorite flavor of Premier Protein Clear into a shallow baking dish. Place into the freezer for 30 minutes. Then, use a fork to gently rake through the any ice crystals that have formed. Place back into the freezer for another 30 minutes. Next, repeat the process of raking the fork through the ice crystals to break them up. Repeat this process for a total of 2-3 hours until no liquid remains.

    How to make granita the super fast, no fuss way in a high powered blender.

    Pour your favorite flavor of Premier Protein Clear into ice cube molds, and place in the freezer until frozen solid. When you are ready to serve, remove the ice cubes from the mold and transfer to a high powered blender. Blend on high using the tamper to move the ice cubes around if the start to stick. In just a few seconds, you will notice the ice cubes turn into more of a shaved ice. It will have an almost snowy consistency. Serve immediately. Do not place the granita back into the freezer or it will turn back into one large ice cube!

    Honestly, I'm just gonna keep these raspberry granita parfaits on repeat for the entire summer season. They were the first dessert in quite sometime to receive a whopping 8 thumbs up from my family! They're sweet and crunchy with a creamy finish that we just can't resist. I also feel pretty darn good about the extra protein boost.

    Don't let the prep time scare you, this dessert does most of the work itself in the freezer! Also, don't limit yourself to just one flavor when it comes to making granitas. You can use this method to make a granita from any type of fruit juice.

    1 Premier Protein Clear, Raspberry

    For the whipped cream

    1 cup whipping cream

    1 teaspoon vanilla extract

    1 pint raspberries

    1-2 tablespoons bee pollen, optional

    Instructions

    To make the whipped cream

    Place the whipping cream and vanilla in the bowl of a stand mixer and whip on high until stiff peaks form.

    To make the parfaits

    In a small glass, scoop in a few tablespoons of whipped cream, top with the prepared raspberry granita, and add fresh raspberries on top. Sprinkle with bee pollen if using. Serve immediately.
