    Lemongrass Mojito {Beard and Bonnet} #glutenfree #vegan

    To say I have been obsessed with lemongrass at our house lately is an understatement  Over the next few weeks I will be sharing a few recipes spotlighting this ingredient. Since it is Friday though, I thought I would share a cocktail that we have been enjoying around the past few weeks. I hope that you all have a safe and happy weekend!

    Lemongrass Mojito
    Adapted from Bon Appetit
    Makes 2 drinks
    2 Tbsp. lemongrass paste
    6-10 large mint leaves
    3 Tbsp. sugar
    6 Tbsp. coconut rum
    3 Tbsp. fresh lime juice
    Ice cubes
    1 cup chilled club soda

    Combine the lemongrass, mint, and sugar in a shaker; mash well with a muddler or the back of a wooden spoon. Add the rum and lime juice; mash until all of the sugar is dissolved. Strain into 2 highball glasses. Fill with ice; top with club soda. Garnish with lime wheels and mint leaves
