    Mother's Day is just around the corner and if you are looking for an impressive breakfast in bed to serve to her then my friend, I have you covered! Açai bowls may have been around a while, but I only recently tried them for the first time and I am officially hooked.

    Last week when it was too hot to turn on a stove here in Long Beach I was scrambling for no cook meals that were hearty enough to double as lunch and dinner that my whole family would love, so I decided to let them in on my açai bowl discovery. Todd was a bit skeptical because he isn't a huge sweet smoothie fan and especially not in the place of dinner. I knew he would be a fan since açai naturally isn't very sweet and the simple addition of apple juice is enough to take away the berries subtle bitterness. It was obvious when every bowl I served up came back empty that my family was sold on these hearty açai bowls and I know you will be too.

    This Sunday forget turning on the stove or waiting in a long line for a prixe fix brunch menu at a local restaurant, fire up your blender instead and surprise your mom with a colorful, decadent açai bowl.

    Decadent Açai bowls are on almost every juice and smoothie shop menu these days, but you can easily make them at home with just a few ingredients!

    • Total Time: 10 mins
    • Yield: 2 bowls 1x

    Ingredients

    Scale
    • 2 cups homemade granola
    • 2 açai smoothie packs
    • 1 large frozen banana, cut into 1-inch pieces
    • ½ cup apple juice

    Garnish

    • shredded coconut
    • raspberries
    • strawberries
    • blueberries
    • sliced banana

    Instructions

    1. Divide the granola into 2 bowls, set aside.
    2. In a high speed blender combine the açai , frozen banana, and apple juice. Blend until smooth. Divide the mixture between the two bowls and top with desired toppings. Serve immediately.

        Hey Donna,

        I get mine in the freezer section at the grocery store next to the frozen fruit. Stores like Whole Foods will definitely have them.
