This kale & quinoa salad is inspired by my 2 favorite superfoods, kale and quinoa! Nick's restaurant here in Long Beach features a similar salad that I literally crave, but paying $17 for a salad as often as I have the craving for it just doesn't make sense. So, I created my own version, now I can indulge whenever I want. This salad is loaded with so many delicious little morsels like red bell peppers, sunflower seeds, almonds, grapes and goat cheese! It's sure to be a favorite in your house too!

My family LOVES spaghetti dinners! We devour this gluten free pasta with Homemade Napoletana Sauce at least once a week. You can make this dreamy sauce with regular butter or you can make it vegan by using Earth Balance. Either way it is delicious! If you are making a vegan version though I have recently found that simmering ¼ cup raw cashews with the tomatoes and onion make this sauce even creamier like the non-vegan version. Sprinkle your finished dish with fresh herbs and vegan Parmesan cheese for a spectacular meal!

Well, hello gorgeous! Look, I don't care what time of year it is, I like soup. Especially, this Grilled Mexican Street Corn Soup. It's spicy and sweet with just a hint of creaminess from that cashew cream drizzle.
