Fast, easy, and delicious - our Fresh Berries and Cream Roll Ups recipe checks all the boxes for lunch time meals! These rainbow roll ups were inspired by a new comic book from our friend Jerry James Stone called, Spooniverse Comics! These roll ups are quick and easy to assemble with only a handful of ingredients like fresh berries, cream cheese, and gluten free spinach wraps. Plus, they're easy enough to whip up that my 9 year old now makes lunch for both of us. WINNING!!!

School lunches look a bit different now that we've been distance learning from home for 9 months!
Gone are the days of packing or even preparing a lunch for Kash, because he actually prefers to make his own. Honestly, as much as I feared this phase, it has been both liberating and delicious for both of us! Kash is almost 10 and independence is where it is at for him, especially when it comes to making meal time decisions. So, when my pal Jerry sent over an advance copy of his new comic cookbook I knew Kash would be excited!
Spooniverse comics are a futuristic tale that weaves recipes right into the comic book so you can actually eat your way though the story line. Unlike most comics, the addition of being able to make and taste the foods that the characters are eating makes this story line a 4D experience that has been super fun and delicious for the both of us. Kash was so inspired by the comic's recipe for Rainbow Veggie Roll Ups that he wanted to make a fruit-filled version, I mean his nickname is the 'fruit bandit' after all!
Kash and I thought it would be fun to show you exactly how he makes his Fresh Berries and Cream Roll Ups!!!
Step 1: Whip together the Brown Sugar Cream Cheese Spread
The fruit dip that I used to pack with apple slices in Kash's lunch doubles as a spread for this fruit filled wrap! I can't believe I never thought of this before. This Brown Sugar Cream Cheese Spread only requires 3 simple ingredients to make - and maybe a bit of elbow grease!
Step 2: Spread the prepared cream cheese on a wrap!
Honestly, you can use any wrap you wish for this recipe. Plain gluten free flour tortillas work great, but Kash and I both love that we can add some sneaky veggies into this lunch recipe by using spinach infused gluten free flour tortillas.
Step 3: Prep your berries!!!
Rinse, slice, repeat! Any berry works in these wraps, but Kash's favorites are California Grown strawberries and raspberries, so we always keep them on hand. Now that he has been working on his knife skills he's a pretty great strawberry slicer too! I mean...just look at that form up there!
Step 4: Layer on the berries and get to rolling!
Make a few thin strips of berries running the length of the tortilla. Then roll the tortilla up into a log shape.
Step 5: Slice and serve.
You will want to get an adult to help here, but slice the rolls into half then slice the halves into thirds.
Just look at those gorgeous little pinwheels!! Aren't they adorable?! They look like a cute little sushi roll and are so delicious that we are positive you will be craving these for lunch as often as we do!

Ingredients
4 gluten free flour tortillas, spinach flavored is our favorite
4 ounces cream cheese, softened
1-2 tablespoons brown sugar
1 teaspoon vanilla paste or extract
6 strawberries, sliced thin
6 raspberries, torn in half
Instructions
In a small bowl combine the softened cream cheese, brown sugar, and vanilla. Stir until completely combined and smooth.
Spread ¼ of the cream cheese mixture across one of the tortillas leaving about ¼ inch border all the way around. Arrange a row of strawberry slices and a row of torn raspberry halves spaced a few inches apart on top of the cream cheese spread.
Roll the tortilla up. Slice in half, then slice the half into thirds. Serve immediately.
Notes
The brown sugar cream cheese spread can be made up to 4 days in advance. Soften the cream cheese at room temperature for 15-20 minutes and then assemble the roll ups right before serving.
