    Peaches and Cream Protein Waffles

    Meal prepping waffle fanatics, that is what we have become over here thanks to these Peaches and Cream Protein Waffles!

    I have been cooking up batch after batch of these babies in my little waffle iron the last couple of weeks and keeping them on hand in the fridge for easy grab 'n' go toaster waffles any time of the day our little heart's desire.

    It's rare that all 4 of us agree on how much we love a recipe, but this one gets a whopping 8 thumbs up! Bonus, I feel like I'm getting extra mom points for setting my kids up for a productive day where hanger doesn't have a chance of setting in and they're none the wiser they just think they're plain ol' waffles. How'd I do it? It was actually super simple, by using Premier Protein Peaches n' Cream Shake in the batter for these waffles I infuse them not only with flavor, but with 30 grams of protein! That's a total mom win right there right?!

    Make a double batch of these Peaches and Cream Protein Waffles allow them to cool completely on a wire rack then store them in a large zip top container in the refrigerator. Whenever you feel like a waffle simply take one out of the bag and pop it in the toaster oven!

    Ingredients

    Scale
    • ½ cup slivered almonds, toasted
    • 1 (16-ounce) package frozen sliced peaches, thawed
    • 4 large eggs, separated
    • ¼ cup water
    • 1 (11-ounce) Premier Protein Peaches & Cream Shake 
    • 3 cups gluten free all purpose flour
    • 2 tablespoons olive oil
    • ¼ teaspoon coarse kosher salt
    • 1 tablespoon vanilla extract

    To serve

    • sliced fresh peaches
    • maple syrup

    Instructions

    1. Place the toasted, slivered almonds into a food processor and pulse until they are broken down. You should have some larger, bite-sized pieces and some almond dust. Be sure not to process to much or you will have almond butter. Measure out 2 tablespoons of the ground almonds for garnish and set aside.
    2. Add the peaches to the bowl of the food processor and pulse until they are broken down into very small bits. Set aside.
    3. Whip egg whites until stiff.
    4. Place the remaining ground almonds in a separate large mixing bowl and add the egg yolks, water, Premier Protein Peaches & Cream Shake ,flour, oil, salt, vanilla and the pureed peaches. Stir until no lumps remain.
    5. Gently fold in the egg whites and bake immediately on a preheated, greased waffle iron according to manufacturers instructions.
    6. Serve warm with maple syrup, sliced fresh peaches, and a sprinkling of toasted almond dust.

      The full recipe does not show on the premier site... it leaves out the shake in the directions!
