    Just in time for May's #NationalSaladMonth celebration, I'd like to introduce you to what is sure to be your new, favorite summer salad! This Strawberry Snap Pea Salad is literally piled high with flavor and looks gorgeous no matter how you toss it.

    The poppy seed dressing in this Strawberry Snap Pea Salad makes it all come together. 

    This epic summer salad gets its BIG flavor from a variety of May's super star seasonal produce like strawberries, sugar snap peas, and Taylor Farms Organic Baby Spring Mix! The addition of toasted almonds, briny feta, and a drizzle of quick-pickled strawberry poppy seed vinaigrette make this salad really sing!

    I bet you I have made 100 variations of this simple salad over the years and every one of them is a keeper. Sometimes I add thinly sliced cucumbers and other times pine nuts and hemp hearts bring the crunch instead of toasted almonds. It's a total winner with crispy goat cheese rounds  instead of the feta and if you are into meal prepping or salad jars for work its a perfect recipe for those things too. It's the little black dress of summer salads, it doesn't matter if you dress it up or dress it down just make it happen!

    Ingredients

    Strawberry Poppy Seed Vinaigrette

    • 1 cup quartered fresh strawberries
    • 2 tablespoons granulated sugar
    • 5 tablespoons white wine vinegar
    • 1 teaspoon kosher salt
    • ¼ teaspoon black pepper
    • ⅓ cup extra-virgin olive oil
    • 1 tablespoon poppy seeds

    Strawberry Snap Pea Salad

    1 (11-ounce) package Taylor Farms Organic Baby Spring Mix

    1 pound strawberries, tops removed, sliced

    1 cup chopped sugar snap peas

    1 avocado, pit removed, sliced

    ½ cup toasted slivered almonds

    ½ cup feta cheese crumbles

    Instructions

    For the Strawberry Poppy Seed Vinaigrette

    Toss the strawberries, sugar, vinegar, salt, and pepper together in a bowl; let stand 15 minutes. Transfer the strawberry mixture to a blender, and process until smooth, about 30 seconds. Turn blender on low, and gradually add olive oil in a slow, steady stream. Return mixture to bowl, and whisk in poppy seeds. Whisk vinaigrette just before serving

    For the Strawberry Snap Pea Salad

    Arrange the Taylor Farms Organic Baby Spring Mix on a platter. Layer the sliced strawberries, sugar snap peas, avocado, almonds, and feta on top. Serve immediately with Strawberry Poppy Seed Vinaigrette
