Every morning when the sun pops up my little fruit bandit makes his way up the stairs like clockwork and wakes me to the sweet sound of singing "You Are My Sunshine". Of course being 3, his words aren't all in the right places which makes this little morning routine even sweeter. He usually starts off with a little "Please, don't take my sunshine away." followed by "Are you happy Mommy?" Of course the answer to my sweet little sunshiny boy is always a resounding "Yes!" to which I receive a rousing chorus of the song and "tuggles" (AKA: cuddles). We lay there and talk about everything and anything that pops into his sweet little mind; he gives me kisses on the cheek, and when we both mutually agree it's time, we head down to the kitchen and make our sunshine smoothie.
This recipe makes the perfect amount of smoothie for both he and I to enjoy. The homemade cashew milk makes it super creamy and the bright burst of pineapple makes it a great way to start the day. My other favorite thing about this smoothie is that it only has 4 ingredients which means I can pretty much make it with my eye's closed...or half open. Whatever the case may be on any given morning.
You Are My Sunshine Smoothie (Gluten Free & Vegan)

- Total Time: 5 mins
- Yield: 2 1x
- 1 ½ cups ten Free & Vegan)">homemade cashew milk
- 1 heaping cup chopped fresh pineapple
- 3 frozen bananas cut into chunks
- 4 Medjool dates, pitted and chopped
- Combine all of the ingredients in a high-speed blender in the order listed and blend until smooth.
If this smoothie isn't thick enough for you add 1 cup of ice.
