This Blueberry Banana Baked Oatmeal might just be the tastiest thing you eat while social distancing! It's easy to make, insanely delicious, AND it cooks up with minimal ingredients! Ahhhh...#pantrypower, is a beautiful thing isn't it?!
While the Coronavirus has forced us all to stay at home, it has also inspired us to be really creative hasn't it? In one of my latest Instagram posts I was sharing how I see the state of the world right now and I wanted to share it with you, our blog readers too...
Do you know what I see happening in the world right now?
I see people at their best.
I see people being mindful of others.
I see people helping perfect strangers.
I see people creating beautiful works of art with their hands.
I see new hobbies being born.....
I see people connecting - more than ever before despite the physical distance.
I see people putting others first just by staying home.
I see ALL the front line workers bravely marching into the fire each day...medical workers, sanitation crews, restaurant workers, grocery store employees, truck drivers... you are our warriors heading off to war everyday and we are so grateful
I see books - finally being written.
Instruments being dusted off and played to soothe our ears and our hearts.
I see families sharing meals together at the dinner table.
I see acts of empathy and love and compassion as frequently as the newsreels update us on the war we are currently waging. ⠀⠀

You see, while #covid_19 has been terrible - it’s also brought forth a sense of oneness that I’ve never seen in my entire 41 years on this earth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In my efforts to protect myself and keep anxiety at bay almost a month ago now when #coronavirus news started trending - I started limiting my exposure to television, news, and social media feeds. I chose a time limit each day for that kind of information and you know what? My anxiety - dropped. My fear meter wasn’t constantly spiking and I was able to find some peace with being still which has led me to all of the beautiful realizations I listed above.

I’m proud of us, I’m proud of you, I'm proud of me. We are brilliant, resilient human beings and I know that when we rise from all of this tragedy and heartache we will be more mindful of how fragile life is and we will realize what is truly important in this life. Ingredients
2 cups rolled oats
½ cup slivered almonds, toasted and chopped
⅓ cup granulated sugar
1 teaspoon baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon coarse kosher salt
2 cups whole milk
1 large egg
3 tablespoons butter, melted and cooled slightly
1 teaspoon almond extract
2 ripe bananas, cut into ½-inch chunks
1 ½ cups fresh or frozen blueberries
optional garnishes: 1 tablespoon raw sugar or maple syrup
Instructions
Preheat the oven to 375°F with a rack in the top third of the oven and a sheet pan or layer of tin foil on the rack beneath it in case any of the baked oatmeal bubbles over. Generously butter the inside of an 8-inch round baking dish.
In a bowl, mix together the oats, half the almonds, sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the milk, egg, half of the melted butter and the extract.
Arrange the sliced bananas in a single layer on the bottom of the prepared pan. Sprinkle ⅔ of the berries over the top of the bananas. Cover the fruit with the oats then slowly drizzle in the milk mixture over the oats.
Give the can a couple taps on the counter to make sure that the milk is evenly distributed throughout the oats then scatter the remaining berries and almonds across the top.
Bake for 35-45 minutes, until the top is golden and the oat mixture has set. Remove from the oven and let cool for a few minutes. Drizzle the remaining melted butter over the top and serve.
Optional: sprinkle the top with raw sugar or maple syrup if desired
