    Sickness...it's inevitable when you live in a house with 2 kids. It never strikes at a good time and it almost always comes when it is the most inconvenient.

    Case in point, the last few weeks around our house! It has literally been one sick family member after another - Todd and I have just resorted to hollering "Man down!" when we see one of the kids succumbing to fever, coughs, or belly aches.

    This has been one of the sickest years in van der Kruik family history to date and so far I have been pretty lucky not to contract too much of what my kids have been serving up, but last week...that was when the kids took a turn yelling "Man down!" and this time it was me. Fever, cough, sneezing, chills, a voice like Barry White - I had it all and I can assure you it was awful.

    All I wanted last week was juice - lots and lots of juice, hence my newest juice craze - the carrot and lime cooler! This bad boy is packed with veggies, fruit, and ginger - it tastes delicious and it's the only thing that hit the spot as I was shivering away under my blanket. It's so good in fact that I promise this juice will be making a regular appearance around here - even when we aren't sick!

    • Yield: 1 large glass 1x

    Ingredients

    Scale
    • 5 carrots, scrubbed
    • 2 limes, rind and pith removed
    • 2 red delicious apples
    • 1 1-inch knob of ginger, peeled
    • 1 teaspoon light agave, optional

    Instructions

    1. Feed the carrots, lime, apples, and ginger through a juicer. Stir. Add the agave if desired, stir and serve.
