    Tabbouleh, a traditional Middle Eastern salad, is cherished for its fresh flavors and wholesome ingredients. In this unique twist on a Recipe for Tabbouleh, I've incorporated sweet cherries and aromatic basil, offering a delightful variation that captures the essence of summer.

    Recipe at a Glance

    • Taste/Flavor: A perfect balance of sweet from the cherries, herby freshness from basil, and a citrusy zing from orange juice. The quinoa adds a hearty texture, while cucumbers keep it light and crisp.
    • Cooking Time: Minimal hands-on time. Prep the ingredients in about 15 minutes, then let the flavors meld for the best results.
    • Best Served With: This tabbouleh pairs beautifully with grilled chicken, lamb kebabs, or falafel. It also works as a fresh side to hummus, pita, or even a dollop of labneh.
    • Simple Swaps: No bulgur? Try quinoa or couscous for a similar texture. Swap cherries for pomegranate seeds or dried cranberries if they’re out of season. If basil isn’t your thing, mint works just as well for that fresh, herbal kick.

    What Is Tabbouleh?

    Traditionally, tabbouleh is a gluten filled, vegetarian salad made up mostly of finely chopped parsley with some tomatoes, mint, onion, and bulgur wheat mixed in then its all seasoned with olive oil and lemon juice. Our cherry inspired version is made with quinoa, fresh cherries, cucumber, red onion, lots of basil, and a citrus vinaigrette that really makes the flavors pop! You can serve a classic tabbouleh alongside ALL sorts of meals like Falafel,  Chicken Shawarma, or  Rosemary Lamb Kofta! I personally like this fruit filled tabbouleh all on it's own wrapped up in a piping hot piece of naan with a sprinkle of feta.

    Important Ingredients

    • Quinoa - Since we do our best to avoid gluten, bulgur wheat is absolutely out of the question for us! I have made lots of different variations of tabbouleh over the years by substituting grains like sorghum and millet for the bulgur that is traditionally used, but we think the quinoa in this version with its mild, nutty flavor and light, fluffy texture is our favorite bulgur stand in yet! Quinoa is high in fiber, contains more protein than any other grain,  and is also packed with iron and potassium!   
    • Salt & Black Pepper – Simple seasonings that tie everything together, letting the ingredients shine.
    • Fresh Cherries – A juicy, sweet contrast to the herbs and citrus, making this tabbouleh pop.
    • Basil – The ultimate herb, adding freshness, depth, and an aromatic punch.
    • Cucumber – Crisp, hydrating veggies that bring texture and balance.
    • Red Onions – Red onion adds a sharp, slightly spicy bite that ties everything together.
    • Orange Juice & Olive Oil – The classic tabbouleh dressing, adding brightness and richness.

    Ingredients

    Scale
    • ⅓ cup extra virgin olive oil
    • 1 teaspoon orange zest
    • 3 tablespoons fresh orange juice
    • salt and pepper to taste
    • 1 ½ cups cooked quinoa, we like to use multicolored quinoa
    • ⅔ pound Stemilt cherries, pitted and halved
    • 2 Persian cucumbers, sliced into thin rounds
    • ¾ cup chopped fresh basil
    • ¼ cup finely diced red onion

    Instructions

    1. In a small bowl combine the olive oil, orange zest, and juice.
    2. Season to taste with salt and pepper then mix with a whisk until combined.
    3. In a large bowl combine the quinoa and the dressing. Mix well.
    4. Add the Stemilt cherries, cucumbers, basil, and onion to two bowls.
    5. Toss to combine then taste. Season with more salt and pepper if needed.
    6. Serve immediately or store in the refrigerator for up to 2 days
    7. In a small bowl combine the olive oil, orange zest, and juice.
    8. Season to taste with salt and pepper then mix with a whisk until combined.
    9. In a large bowl combine the quinoa and the dressing. Mix well.
    10. Add the Stemilt cherries, cucumbers, basil, and onion to two bowls.
    11. Toss to combine then taste. Season with more salt and pepper if needed.
    12. Serve immediately or store in the refrigerator for up to 2 days.
