I am all about easy recipes and it literally doesn't get any easier than this black bean salsa!
I make this recipe year round and keep it on hand for topping nachos, tacos, burrito bowls, sweet potato toast, eggs and pretty much anything else I can think of smothering with it. This black bean salsa is perfect for just about any occasion from BBQ's to lunch boxes and is always a welcome addition at a potluck!

- 1 can black beans, rinsed and drained
- 1 small jalapeño, seeds and ribs removed
- ½ cup minced red onion
- ¼ cup minced cilantro
- juice of 2 large limes, about ¼ cup
Instructions
- Combine the black beans, jalapeño, red onion, cilantro, and lime juice in a bowl. Season to taste with salt and pepper and set aside to marinate for 10-15 minutes before serving.
