Today is a BIG day, our daughter's 8th grade promotion is today and I am so proud of her that I could burst!
I cannot even wrap my head around the fact that she will be starting high school next year. Where the heck does the time go?! 14 years suddenly feels like a flash of light and I am grappling to understand how and when she grew up. I'm pretty sure I was here for all of it, but yet I still feel like I didn't experience enough of it. I have rushed weekday breakfasts, plowed through homework sessions and hurriedly chauffeured her from point A to point B for years. Now it feels like I should have slowed down and savored those everyday moments, because if high school goes by as quickly as middle school then it too will be over before we know it.
Rushing weekday breakfasts is probably my biggest regret as a mom. Our grab and go morning routine doesn't really lend itself to sitting and gathering around our family table for a meal together. I have spent a lot of time the past few weeks wondering if I should have put forth more of an effort to orchestrate a meaningful morning routine for my kids.
Maybe if I had started our weekday mornings with these peaches and cream smoothie bowls we would have all made a point to sit and eat together more often. Peaches are by far our favorite summer fruit and if anything could get us all to take a minute at the table in the mornings this would be it. I know changing a morning routine that is 14 years in the making is a tall order to fill, but I am up for the challenge. I want to spend the next 4 years relishing every single moment with her that I can after all there will be plenty of time for grab and go breakfasts once she heads off to college.

Ingredients
- 2 cups Silk Vanilla Coconutmilk
- ½ cup gluten free oats
- 2 tablespoons chopped, toasted pecans
- 1 teaspoon pure vanilla extract
- 1 frozen banana, sliced into 1-inch pieces
- 2 ½ cups frozen peaches
- 2 tablespoons pure maple syrup
To serve
- sliced fresh peaches
- toasted pecan halves
- flaked coconut
- bee pollen, omit if vegan
Instructions
- Combine all of the ingredients in a high speed blender and blend until completely smooth. Divide between bowls and serve with desired toppings.

I was craving something sweet and cold last night -- I did not have Silk Coconut milk in the house so I used regular Goya canned coconut milk instead and added a bit of cayenne for heat and it turned out delicious! Thank you for this recipe.
