If I had to guess I would bet that you had leftover cranberry sauce from Thanksgiving just hanging out in your fridge. It's probably getting a little lonely in there without all of the turkey and the fixings. Maybe you should let that cranberry sauce really shine by turning it into a delicious dark & stormy cocktail!
Whether you have a raw cranberry citrus relish or an actual cooked cranberry sauce it doesn't matter, they both work great in this cocktail, although the cooked version makes for a much sweeter drink.
We served this up at the last-minute holiday party that we threw with the Friends Who Fête girls and it was a huge hit! They make for really easy sipping, almost too easy!

Ingredients
- 2 heaped tablespoons cranberry relish or cranberry sauce
- 2 ounces mandarin juice, if you don't have mandarins or can't find mandarin juice you can use freshly squeezed orange juice
- 1 ounce spiced rum
- ginger beer
To garnish
- sugared cranberries
Instructions
- In a pitcher combine the cranberry relish/sauce, mandarin juice, and spiced rum. Stir to combine. Strain over ice in a rocks glass then fill to the top with ginger beer. Serve immediately with sugared cranberries if desired.
