    Gluten Free Dark Chocolate Pear Scones

    This gluten free Dark Chocolate Pear Scone Recipe is so delicious. They deserve to be served tree-side with a cup of coffee Christmas morning! They're packed with fresh Red d'Anjou pears, studded with dark chocolate morsels, topped with a drizzle of fresh pear icing and a hefty sprinkle of sugar crystals. In other words, they're a bit of holiday magic for your taste buds!

    For the first time since I was pregnant with Kash, 8 years ago, we are spending Christmas Eve in our own beds and waking up Christmas morning at home!

    It's an exciting change to plan to spend the holidays here and while in year's past I would have set out to make a big 'to-do' of it and been completely exhausted before Christmas even got here, this year I'm taking more of a K.I.S.S. method approach. An old employer of mine used to tell me when I was overwhelmed on a big work project to always remember the K.I.S.S. method. K.I.S.S. stands for 'keep it simple stupid' and while it's a funny little saying it really does help me keep things in perspective.

    As far as I'm concerned the holidays are the BIGGEST project that rolls through this house all year long. From Halloween to Christmas is literally a blur for me every year, because I spend so much of that time trying to keep our already packed schedules going while simultaneously trying to create ALL the traditions and holiday experiences for our kids. I easily get carried away and stretch myself so thin that I fail to actually truly enjoy the holiday's myself.

    Look if I'm being real with you, 2018 was HARD! But this gluten free scone recipe makes it a little easier.

    It was a growing year for our family. We moved cross country, dealt with chronic health issues, our 2-year-old nephew was diagnosed and has been battling cancer, and we worked harder than ever. It was a year full of really high hi's and equally low-low's. We've grown together through all that we've been through and we've proven that even when the world around us is at its worst, we are always at our best when we are together. This year taught me that you don't have to go over the top to create a meaningful moment for your loved ones. It's more important to show up and to be truly present in the moment instead of being physically there, but so emotionally and mentally taxed that you might as well be thousands of miles away.

    So, instead of chaining myself to the kitchen making giant pans of homemade gluten free cinnamon rolls, cookies, and holiday feasts while simultaneously missing the quality time I crave with my little family. I've decided to pick a handful of easy to make treats that we love just as much as those extravagant ones and that taste every bit as decadent and celebratory like these Dark Chocolate Pear Scones.

    Gluten Free Dark Chocolate Pear Scones

    Ingredients

    Scale
    • 6 tablespoons unsalted butter
    • 1 Red D'Anjou Pear
    • ⅓ cup superfine brown rice flour
    • ⅓ cup sweet white rice flour
    • ½ cup tapioca flour
    • ½ cup cornstarch
    • 1 teaspoon potato starch
    • 1 teaspoon xanthan gum
    • 3 teaspoons baking powder
    • 1 teaspoon baking soda
    • 3 teaspoons granulated sugar
    • 1 teaspoon coarse kosher salt
    • 1 cup buttermilk
    • ¼ cup dark chocolate chips
    • 2-3 tablespoons sparkling sugar
    • 1 cup powdered sugar
    • 2 ½ tablespoons fresh pear juice

    Instructions

    1. Chill the butter so it's very cold.
    2. Slice the butter into small cubes, place in a bowl, and transfer the bowl to the freezer to chill. 
    3. Preheat the oven to 425°F and line a baking sheet with parchment paper. Set aside.  
    4. In the bowl of a food processor fitted with the 'S' blade, combine the brown rice flour, sweet white rice flour, tapioca flour, cornstarch, potato starch, xanthan gum, baking powder, baking soda, sugar, and salt. Pulse together until completely combined. Add the cold butter pieces to the flour mixture in the food processor and continue to process until the butter is completely cut into the flour and the mixture is consistent in texture. Transfer the mixture to a large mixing bowl and place in the freezer. 
    5. Using the shredding disc of the food processor or a hand grater, shred the pear. Place the pear shreds in a mesh strainer over a bowl and press on the shreds so that they realize their moisture. Set aside. 
    6. Remove the flour mixture from the freezer and add the buttermilk, gently mix until the dough begins to come together. Add ½ cup of the shredded pears and the dark chocolate chips to the bowl and fold to incorporate.   
    7. Lay a large piece of plastic wrap over your kitchen counter and turn the dough out on top of it. Working quickly, use the edges of the plastic wrap to help you gather the dough into a mass and gently pat into a thickness of  ¾-inch. 
    8. Cut the dough into 3-inch squares with a knife or into rounds with a floured biscuit cutter. 
    9. Arrange the biscuits no more than 1-inch apart on a baking sheet, sprinkle with sparkling sugar, and bake in the oven for 15 minutes or until golden and cooked through. 
    10. Once golden brown and cooked through remove the scones from the oven and allow to cool completely on a wire rack.  

    To make the pear icing (optional): 

    Combine the powdered sugar and pear juice in a bowl, beat with a whisk until completely combined. Drizzle over completely cooled pear scones and allow to sit at room temperature until the icing sets.
