    I would like a few more weeks where gigantic bowls of fruit qualify as meals, time to play in the sun and just a few more mornings of sleeping in without an alarm. Is that too much to ask?

    Whether I like it or not, the end of summer is near. We are shopping for school uniforms, my daughter has already decorated her binder ( One Direction of course!) and I find myself trying to cram a million and one things into every single moment of daylight we have.

    Pineapple and Cilantro Moscow Mule

    Looking to make a refreshing non-alcoholic drink? Simply omit the vodka and replace it with ginger beer.

    • Yield: 1 drink 1x

    Ingredients

    Scale
    • 6 cilantro leaves
    • ice
    • 1 ½ ounces vodka
    • 4 tablespoons pineapple puree
    • 1 tablespoon freshly squeezed lime juice
    • ginger beer

    Instructions

    1. Gently muddle the cilantro leaves in a rocks glass to release their oils. Add ice to the top. Pour the vodka over the ice followed by the pineapple puree, lime juice, and top with ginger beer. Stir and serve.

    Notes

    To make pineapple puree simply blend pineapple chunks in the blender until smooth. Store in an airtight container in the refrigerator until ready to use.

    If you like sweeter drinks add a tablespoon of agave to the drink.

      I made this last night for a few friends. It was a hit! Actually, the husbands ignored their beer and requested this cocktail instead! Super refreshing in this sweltering heat. Thank you!

      Pineapple and cilantro are just perfect with each other; aren't they? And I am thoroughly rebelling against the notion that summer is almost over. Just yesterday, I sat out in the backyard and enjoying doing nothing, for just a moment. I've recently enjoyed adding fresh peaches to a Moscow Mule, but I will definitely try adding some pineapple. With that gingery bite? Yes, please. Enjoy those last-of-summer days! 🙂

      Mm, lovely. I happen to adore pineapple AND cilantro, although I've never had them together and I can't think of why not. This combination should've happened for me a long time ago - so thank you for introducing it to me! Lovely
