    Selecting Ripe Yet Firm Pears for Poaching

    Alright, my friend, let's start by picking the fruit. I look for the juiciest, most fabulous pears in town. Look for those sweet and fragrant beauties that are ripe, but still firm enough to hold their shape. Think Bosc or Anjou—these pears will bring the flavor of this poached fruit recipe to a whole new level. Trust your nose, too. If your pears smell sweet with subtle floral tones, you know you've hit the flavor jackpot!

    Mastering the Art of Poaching

    Poaching can be an intimidating cooking technique to wrap your head around, but it's actually pretty easy!

    Start by peeling your pears. Grab a deep saucepan, and add dry Rosé wine, sugar, fresh ginger, and vanilla. Then let the pear hot tub party begin as you gently simmer the fruit in this fragrant bath.

    Once the pears have cooked through, they will be super tender and flavorful from the poaching liquid. We're talking eat it with a spoon, melt-in-your-mouth goodness that'll make you weak in the knees!

    A Drool-Worthy Hot Fudge Sauce!

    Recently, I set out to create the best hot fudge sauce ever, and friend, I think I've done it! This delightful dessert topping is incredibly smooth and sultry, and made with less sugar. Thanks to one of my favorite pantry staples, California prunes, it's also packed with nutrients and fiber.

    Now, you might be raising an eyebrow at the mention of prunes in your chocolate sauce. But trust me, prunes bring a natural sweetness and a depth of flavor that perfectly complements the richness of chocolate, making them the perfect sneaky addition to your chocolate sauce.

    Trust me, this recipe will make all your hot fudge sauce dreams coming true, and you'll be licking the spoon like there's no tomorrow!

    How to Make a Tender Poached Pear With Fudge Sauce

    After you've handpicked the juiciest pears and made my luxurious hot fudge sauce, it is time to poach! For this recipe you will only need a few ingredients.

    • 1 bottle of dry Rosé wine from California
    • Granulated sugar
    • Fresh ginger
    • Vanilla extract
    • Pears
    • Hot fudge sauce for serving
    Add a bottle of dry Rosé wine to a saucepan over medium heat.
    Add the sugar
    Add sugar.
    Peel & add the ginger
    Peel the ginger with a spoon, slice into coins & add to the saucepan.
    Add the vanilla
    Add the vanilla.
    Peel & add pears
    Peel & add the pears.
    Add the water
    Add enough water so that the pears are submerged. They will float to the surface, but we will fix that next.
    To ensure the pears stay submerged you can add a round of parchment paper over them.

    How to Plate Poached Pears Like a Pro.

    We're going to create an edible masterpiece by spreading a generous layer of that irresistible hot fudge sauce onto a plate. Now, gently place the perfectly poached pear on top of that luscious bed of chocolatey goodness and drizzle a bit of the reduced poaching liquid over the top.

    You can even use the reduced poaching liquid on its own without the chocolate - but my question to you is why would you do that?! Who can resist chocolate?

    Rosé Poached Pear With Hot Fudge Sauce

    Ingredients

    Scale

    1 bottle dry Rosé 

    ½ cup sugar or honey

    1 ½-inch piece of ginger, peeled and sliced into coins

    1 tablespoon vanilla extract 

    4 pears, peeled 

    Hot Fudge Sauce to serve, optional but encouraged

    Instructions

    1. In a large pot, bring the Rosé wine, sugar or honey, vanilla, and ginger to a simmer over medium heat. Stir until the sugar dissolves.

    2. Gently lower the pears into the liquid, adding enough water to ensure they are fully covered. If you have a piece of parchment paper handy, you can cut it into a round the size of the pot, to sit right inside the saucepan over the pears and submerge them. If not, make sure to rotate the pears as they cook to ensure they cook on all sides.

    3. Simmer until the pears are very tender, 20 to 25 minutes, 30 if the pears are large. Remove the pears from the liquid and cool completely. If not eating the poached pears immediately, see recipe notes for storage instructions. 

    4. To create a sauce to spoon over the pears, bring the remaining liquid to a boil and cook, uncovered, until it reduces to about ¾ cup of syrupy liquid. This can take anywhere from 15-30 minutes. 

    5. To serve, spread 2-3 tablespoons of hot fudge sauce onto each of 4 plates, and place a poached pear on top. Drizzle 1- 2 tablespoons of the reduced poaching liquid over each pear and serve immediately.

    Notes

    If planning to store: 

    Do not reduce the poaching liquid to a syrup. Instead store the leftover poached pears in their liquid in an airtight container in the refrigerator for up to 8 days.
