It’s that time of year again kids, time to #DrinkTheSummer with our blogging buddies while we reminisce about all of the long, lazy summer days of 2016 that are behind us. How about we make a toast to summer’s end with a few of these easy Melon Mojitos?!

I am still consuming watermelon at a feverish pace over here! I swear, it seems like every time I find enough interesting ways to eat the one I have sitting in the kitchen my CSA drops off another one. Honestly, I was just about ready to throw in the towel on melon all together this year since I have literally eaten my weight in it. Then a couple of weeks ago I started sipping on cocktails made with melon puree and you guys, I’m officially back on the melon train! Go ahead CSA, bring me another melon – I dare you!

Easy Melon Mojitos

  • Author: Beard and Bonnet
  • Yield: 2 small or 1 large cocktail

Description

Want a creamy version of this cocktail? Add 1 tablespoon full fat coconut milk to the ingredients before you strain over ice.


Ingredients

  • 4 ounces watermelon puree, see note
  • 2 sprigs mint
  • juice of 1/2 a lime
  • 1 tablespoon agave
  • 2 ounces coconut rum

To serve

  • ice or frozen cubes of watermelon
  • mint sprigs, optional
  • lime wheels, optional

Instructions

  1. Combine all of the ingredients in a cocktail shaker with a scoop of ice. Shake vigorously enough for 20-25 seconds that the ice in the shaker breaks down the mint leaves into little flecks. Strain over ice into 2 small rocks glasses and garnish with frozen cubes of melon, mint sprigs and lime wheels. Serve immediately

Notes

To make watermelon puree: place the pink flesh of a seedless watermelon in a blender and blend on high power until completely the melon is broken down and smooth. Strain through a fine mesh strainer or cheesecloth if the puree feels gritty.
