Lunch Box || Falafel Lettuce Wraps and a Teen Approved Lunch Box
Hope you don’t mind another lunch box recipe, because these Falafel Lettuce Wraps are too good not to share!
Only 2 more days and I will officially be the mom of a highschooler! What the heck?! Ok, I have a kindergartner too, but it’s high school that is currently blowing my mind. Eliza is already acclimating to high school life and making the transition look effortless. She made the volleyball team, dealt with the school counselors herself to work out an issue on her schedule and knocked out her summer homework without me even really asking. Meanwhile, I’ve been over here a blubbering, teary mess. How did she become the adult in this situation?!
In all of the excitement and chaos of getting prepped for high school we have been having lots of conversations about eating habits. Eliza realizes that she is working her body and her mind extra hard right now and that she needs to be sure that she is eating healthy, well balanced meals and snacks, but she is also a teen and teens are very weird about their eating habits – especially around other teens.
This year we have worked together to map out acceptable teen approved snacks like these goodnessknows snack squares and lunches like our falafel lettuce wraps. It’s important to me that she has a protein filled lunch and a hearty snack before afternoon volleyball practices and this lunchbox is packed with just that! Honestly, I’m feeling pretty darn good about what we’ve come up with and I know she is too.
I feel certain that a lunch packed with falafel, hummus, fresh veg and loads of fruit will not only taste great, but will stick with her and give her energy to make its through to the end of the day. For snacks I’m tucking in a few goodnessknows snack squares; Eliza loves the way that the cranberry, almond, dark chocolate goodnessknows snack squares taste and I love that they are made without artificial colors, flavors or sweeteners. We both win! (If you are a mom of a teen then you know it’s rare that you both win!)
- 2-3 falafel
- 2 leave iceberg lettuce
- 1/4 cup mixed veggies (shredded carrots, mini bell pepper strips, chopped tomatoes)
- 2 tablespoons mixed herbs (dill, parsley, tarragon, mint and cilantro are a blend)
- 1 single serve hummus cup or 1/2 cup hummus
- Place all of the ingredients into a lunchbox being mindful to separate the vegetables and the falafel so that the falafel doesn’t get soggy.
