    As someone who was adopted at birth herself, it gives me great joy to be coming together with an amazing group of bloggers today to celebrate the birth and adoption of Larson Overhiser, Alex, and Sonja of A Couple Cook’s, incredibly beautiful baby boy! Since I am currently on the quest to find answers about my own birth mother, Larson's story has completely captivated my heart. It's amazing the ripple effect one tiny little human being can have right?

    For Alex and Sonja, who have been waiting for 8 long years to start their family, this is the beginning of the most incredible love story you will ever experience. The incredible gift of raising a child, whether it is your own biologically or through adoption, is unparalleled by any other adventure you can have in life. Your hearts will love deeper while your hopes and dreams soar higher than you ever imagined possible. I'm so grateful for your openness and for your willingness to share your adoption story. It has brought me a breath of fresh air and a renewed excitement to uncover my own truth.

    Like any new parents, Alex and Sonja are going to be needing lots of healthy snack recipes to get them through the first few months with a newborn. (I’m pretty sure the first 4 weeks of Kash’s life we survived on energy bars and latte’s alone.)  So, today I am sharing one of our favorite savory snacks, coriander and lime scented cashews. These decadent morsels come together in about 5 minutes with only 6 ingredients that more than likely are already sitting around in your kitchen. Which pretty much makes them perfect for both new parents and easy entertaining, right?!

    This is the ultimate snack for entertaining or for just indulging! Try adding the onions raw at the end of the dish for a completely different take on this treat.

    Ingredients

    Scale
    • 1 cup raw cashews
    • ½ cup red onion, finely chopped
    • 1 tsp coriander powder
    • ½ tsp mild red chili powder
    • 3 tbsps cilantro, finely chopped
    • ½ teaspoon sea salt
    • ½ tsp zest and the juice of half a lime

    Instructions

    1. Dry toast the cashews in a pan on medium heat, about 3 minutes, until turning golden brown in spots. Add the onions, herbs, and lime zest then cook for 1 minute. Remove from the heat and add the lime juice. Toss and serve immediately.
