Well, it's official our kids are out of school for the summer! Where the heck did this past year go? Every year a few weeks before the end of school I begin making frozen creations to stock in the freezer for our kids. Did you see my ice pops, popsicles , or our latest float creation? The goal is to stock my freezer to max capacity with healthy frozen treats for the kids so that I am not bombarded with requests for the not so healthy frozen snack alternatives at the store. This granita is super easy to make with only 2 ingredients, fresh fruit and coconut water, plus it's a great alternative to those pesky snow cone cravings that my kids tend to have on scorching hot summer days.
My favorite thing about this granita though is the fact that it is completely customizable to your taste. Just swap out equal parts of whatever fruit you like for the pineapple in this recipe, but whatever you do leave the coconut water in there. It is loaded with electrolytes like sodium, potassium, and magnesium which will help to keep you and your little ones hydrated on those hot summer days.
Step 1: Place the chopped pineapple and half of the coconut water together in your blender.
Blend until smooth...
Once the mixture is smooth add the remaining coconut water and blend just until combined.
Step 2: Transfer the mixture to a shallow pan and freeze for 4-6 hours until the granita has set.
Step 3: Scrape the frozen granita with a fork to create shaved ice and serve.
Get in there with your fork, don't be shy. The granita should flake pretty easily with a little pressure, but if you left your granita in the freezer for too long you may have to use a little elbow grease trust me it's worth it!

- 3 cups chopped pineapple
- 2 cups coconut water
Instructions
- In a blender combine the pineapple and half of the coconut water. Blend until smooth. Add the remaining coconut water and blend to combine.
- Transfer the mixture to a shallow baking tin and freeze for 4-6 hours until set.
- Once the granita has frozen scrape granita with a fork to create shaved ice and serve immediately.
