    I am a sucker for a waldorf salad in the fall. I don't really know why, maybe it's because my grandmother used to make it so it has a certain nostalgia factor or maybe because it's just delicious!

    Since we have a treasure trove of apples from our trip to the orchard last week I decided to send Kash with a deconstructed waldorf salad for lunch. It's a fast lunch to put together, wholesome and its pretty darn delicious!

    Ingredients

    Scale
    • ¼ cup cubed apple slices, I used a combo tart and sweet apples
    • ⅛ cup toasted walnuts
    • ⅛ cup sliced celery
    • ¼ cup sliced grapes
    • ¼ cup cubed rotisserie chicken
    • side of dressing, optional I sent ours with ranch instead of the traditional mayo based dressing in a waldorf

    Instructions

    1. Layer the ingredients in the lunchbox and pack along with an ice pack so that the ingredients stay nice and cool until lunch.
