    In case you didn't know, avocado toast is SO 2018 - I'm ready to shake it up and add a new flavor profile to the breakfast lineup around here. That's why, I'm deeming 2019 the year of hummus toast and I think once you get a taste of this Taco Inspired Hummus Toast you will be too!!

    A large, thick piece of toasted sourdough is topped with hummus, walnut taco crumbles, a fried egg, pico de gallo, and pickled red onions.

    Fancy toast has been all the rage on Instagram for a few year's now and it's not hard to see why!

    First, it's pretty darn easy! I mean, toasted bread with a slathering of butter and sprinkle of sea salt is good ALL on its own so there is no need for extra effort if you don't feel like it.

    Second, it doesn't matter if you go sweet or savory when you add toppings because both ways are equally delicious.

    Third, if you do decide to top your toast, there is virtually an endless combination of ways to dish it up, so your toast routine never gets old!

    This savory Taco Inspired Hummus Toast hits all the right flavor notes and fills me up without dragging me down!

    We are hummus obsessed in our house! Of course I serve it as a dip, but we also use hummus to schemer sandwiches,  as the base of salad dressings, and we even fill savory tarts with it. Anyway you serve it, hummus is always a welcome addition to our meals around here, but up until recently I hadn't really made hummus a part of my breakfast routine.

    This taco inspired hummus toast starts with a hearty slice of bread that has been lightly spritzed with olive oil and toasted to perfection. Then it is slathered with taco hummus , sprinkled with walnut taco "meat", then topped with pickled onions, a perfectly fried egg, and pico de gallo. Trust me when I say that this toast eats like a meal and won't leave you hangry before lunch time.

    I wasn't kidding, I am going ALL in on the hummus toast train and to prove it here's 5 more delicious ways to top your toast with hummus!

    Spread toast with the flavor of hummus indicated below then top with any or ALL of the suggested toppings for 5 out of this world hummus toast combinations that I know you are going to love!

    1. Classic Hummus || sliced tomatoes, sliced cucumber, flaky sea salt, freshly ground black pepper, squeeze of lemon.
    2. Roasted Garlic Hummus || oven roasted tomatoes, basil, balsamic drizzle, flaky sea salt, and freshly ground black pepper.
    3. Classic Hummus || roasted red bell pepper, black olives, red onion, feta cheese, parsley, flaky sea salt and black pepper.
    4. Jalapeno Hummus || fried egg, pico de gallo, pickled onions, flaky sea salt and black pepper.
    5. Spinach Artichoke Hummus || sautéed spinach greens, marinated artichoke quarters, shaved Parmesan, flaky sea salt and black pepper.

    Ingredients

    For the Walnut Taco "Meat"

    ½ cup raw walnuts
    ¼ cup raw cashews
    ¼ cup blanched slivered almonds
    ¼ cup sun-dried tomatoes, soaked in hot water for 30 minutes, drained and roughly chopped
    ¼ cup sun-dried peppers, soaked in hot water for 30 minutes, drained and roughly chopped
    1 tablespoon olive oil
    1 ½ teaspoons ground cumin
    ¼ teaspoon smoked paprika
    ¼ teaspoon dried oregano leaves, not crushed
    ⅛ teaspoon onion powder
    ⅛ teaspoon garlic powder
    2 teaspoons Tamari or soy sauce
    ⅛ teaspoon coarse kosher salt
    1 tablespoon chopped fresh cilantro

    For the Taco Inspired Hummus Toast

    4 thick slices bread of choice, toasted
    ½ cup taco hummus
    ¼ cup prepared walnut taco “meat”
    4 eggs, cooked to your liking, I prefer fried but scrambled works great too
    optional garnishes: pickled onions, pico de gallo, cilantro

    Instructions

    For the Walnut Taco "Meat"

    Place the walnuts, cashews, and almonds unto the bowl of a food processor fitted with the "S" blade. Pulse until the nuts are broken down into small pieces.

    Add the remaining ingredients to the food processor with the nuts and continue to pulse until the tomatoes and peppers are broken down and the mixture resembles ground meat.

    Store in an airtight container in the refrigerator for up to a week or freeze for up to 3 months. If using from a frozen state, simply slice off pieces of the taco "meat" with a sharp knife to use in dishes.

    To assemble the Taco Inspired Hummus Toast

    Spread approximately 2 tablespoons of taco hummus onto each slice of toast. Sprinkle each of the toasts with ¼ of the taco "meat", top each with an egg cooked to your liking and garnish with desired toppings. Serve immediately.

    Notes

    The walnut taco "meat" recipe will make more than you need. This particular recipe makes approximately 1 ½ cups. Store and unused taco "meat" in the refrigerator or freezer.

    The cook time is the approximate amount of time it takes to toast the bread and cook the eggs.

    To make pickled onions || Place 1 cup very thin onion slices in a glass or non-reactive, storage container with a lid that fits very tight. Add¾ cup freshly squeezed lime juice to the container, cover and shake well to make sure that all of the onions are coated. Allow to sit and pickle at room temperature for 15 – 20 minutes. These pickles can be made up to 2 days in advance and stored in the fridge in an airtight container.
